The  Highland is our newest cheese, named after the local gorgeous Highland Road, overlooking Lake Champlain. Highland is semi-soft, buttery, and mildy sharp.

Pepper Jack is a mildly spiced party cheese.

Wild Muse cheese is a collaboration between North Country Creamery and Ausable Brewing Co. The rind is washed in a cherry Brett made by our friends and neighbors using the cherries grown on our farm.
